Ingredients

    4 large Potatoes, diced
    1/4 cup Olive Oil
    Salt & Pepper
    1 cup Mayonnaise
    1 cup Cheddar Cheese, shredded
    1/2 cup Bacon Bits

Directions

1. Preheat oven to 400F.

2. Toss potatoes with Olive Oil and season wth Salt & Pepper. Spread in a single layer on a baking sheet that has been sprayed with non-stick cooking spray.

3. Bake 15-20 minutes, toss potatoes around and bake an additional 15-20 minutes, until golden and cooked through.

4. Remove potatoes to a bowl and add Mayonnaise, Cheese, and Bacon. Season to taste again with Salt & Pepper. Best if served warm.
