Number of Servings: 6

Ingredients

    8 oz. fat free cream cheese
    1/2 c. Mozzarella cheese, shredded
    1/2 c. cheddar cheese, shredded
    1 tsp. garlic powder (not salt)
    1 tsp. liquid smoke
    1/4 c. egg substitute

    4 slices of bacon, chopped
    1/4 c. onion, chopped finely
    1/2 c. mushrooms, chopped

    saltine crackers, about 10 squares, crushed

Directions

Makes 6 servings. 4 poppers each

Cook bacon, onions and mushrooms in a skillet until the bacon is done...drain and cool.
--Combine cheeses, egg,liquid smoke and garlic. Add cooled bacon mixture.

--Halve the jalapenos. Use a spoon to clean out the seed and veins (best to wear rubber gloves).
--Stuff the pepper halves with the cheese mixture.
--Press the cheese side of the pepper into the cracker crumbs.

Bake at 350 degrees for 30 mnutes.

    Incredible!
    I made this for an Olympics Opening Ceremony party. They were a HUGE hit! I didn't have any bacon or mushrooms, but these were delicious without them. I am definitely addignthis recipe to my favorites! - 8/10/08
