Ingredients

    12oz Chicken Breast, Skinless
    80g Red Bell Pepper
    132g Green Snap Beans
    1/12tsp Chicken Stock Powder
    150g Liberte Plain No Fat Yogurt
    2.5tsp Cornstarch
    30ml Olive Oil
    1.25tsp Curry powder

Directions

1. Heat 10ml oil in a large skillet and brown chicken until cooked through
2. Meanwhile, heat the rest of the oil in andother pan and add the vegetables and cook until softened
3. In a small bowl mix together the chicken stock, yogurt, corn starch, and curry powder
4. Add mixture to the chicken and simmer until sauce is thickened.
5. Divide vegetables, chicken, and sauce evenly among 3 plates
