Brunch is a sacred tradition in our household. This is one of our favourites. You can easily make it ahead the night befor and pop it into the oven in the morning. Ingredients

    Egg substitute, liquid (Egg Beaters), 1 cup
    Skim Milk, 1 cup
    100% wholewheat bread, 4 slices
    1 M&M Turkey Sausage, cooked and sliced into thin rounds
    Cheddar cheese - fat free, 3/4 cup
    Pepper, black, 1/4 tsp
    *Herb - Oregano, Dried (1 tsp)
    *Basil, dried, 1 tsp
    *Peppers, sweet, red, fresh, 1/2 cup, chopped

Directions

Cook the turkey sausage in a frying pan that has been lightly sprayed with Pam olive oil cooking spray.
In a medium bowl, combine the Egg Beaters, milk ,spices, red pepper and sausage. Dunk the bread in the mixture, coating both sides.
Pour into an 8" greased cooking pan that has been sprayed with olive-oil flavoured Pam. Sprinkle with cheese.
Bake in a 350F oven for about 35-40 minutes or until a skewr inserted in the center comes out clean.
