Ingredients

    2.5 pounds Ground Turkey
    3 med tomatoes
    1 Green Bell Pepper
    1 cup Mushroom slices
    can tomato sauce
    1/4 onion
    8 slices lunch ham
    1.5 cups Italian bread crumbs
    12 oz Ricotta cheese
    1/2 cup cottage cheese
    1 cup milk
    2 eggs
    3/4 cup marinated artichoke hearts
    1 tbsp oregano
    2 tsp black pepper
    1tsp salt
    1 tbsp Chives
    1 tsp Paprika
    16 Green Olives (sliced)

Directions

Chop up and mix all of the tomatoes, peppers, onion, artichoke, mushrooms with 2/3 of the tomato sauce. Set veggie mix aside. Combine remaining ingredients, except the other half of the tomato sauce. Flatten turkey mixture on a cookie sheet and place veggie mix on top of half of the ham slices in the center.. Cover veggie mixture with remaining ham slices. Pull the turkey up from the sides to form into a loaf with the veggie mixture in the middle. Pour remaining tomato sauce over loaf. Cook 90 minutes at 400 degrees.
Makes 16 servings.
