Ingredients

    1lb Beef Round roast, ground WITHOUT adding suet or any additional fat.
    1 cup chopped Bell pepper, any color
    1 cup chopped onion
    Taco Seasoning, Or use your own combination of Taco seasons, including cilantro and chili powder (1-4T of each, to your taste)
    6 oz Greek Yogurt (any PLAIN Yogurt will do, but the thicker greek yogurt allows to add more salsa with becoming "soupy").
    1-2 cups salad greens (I use 2 c of romaine and some spinach)
    2 roma tomatos, chopped
    1/2 c grated cheddar cheese (any cheese will work)

Directions

Brown meat. Add onion and green pepper once meat is pink. Stir in Taco seasoning (add water if taco seasoning directs you to do so). Prepare greens on plate. Mix yogurt and salsa. Add 1/4-1/3 cup meat mixture over greens and top with salsa mix.
