Ingredients

    cloves garlic, minced
    2.5 tbsp canola oil
    5 tsp curry powder
    1/4 tsp cayenne pepper
    2 32 oz organic veg. broth
    1 large bunch organic swiss chard, stalks removed, coarsely chopped
    2 cups organic red lentils, rinsed
    1 15 oz can organic garbanzo beans, drained
    1/2 cup organic red quinoa, rinsed thoroughly
    1 cup organic carrots, chopped
    1 cup organic celery, chopped
    3 tbsp organic shallots, chopped
    l large organic red bell pepper, chopped
    1 stalk organic broccoli, tossed in olive oil and roasted
    3/4 cup organic edamame shelled

Directions

Heat oil in large sauce pan over medium high heat. Add shallots, carrots, pepper, garlic, celery approx. 10 minuntes. Mix in curry and cayenne. Add broth, lentils, quinoa, edamame, and garbanzos. Stir, bring to boil. Reduce heat cook about 10 minutes then add chard. Cook an additional 5 minutes. Turn off and let set for a few minutes.
Opptional add a dollop of plain yogurt.
