Ingredients

1 cup yogurt (nonfat plain)
Zest of 1 lemon
1/8 teaspoon ground cumin
1/8 teaspoon ground paprika
1/8 teaspoon ground cayenne
2 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried mint
1 teaspoon dried thyme
1 1/2 pounds leg of lamb, cut into 1 inch cubes
Directions
Combine all of the ingredients, except for lamb and stir well. Add the chunks of lamb, coat evenly with the yogurt mixture. Either cover and place in the refrigerator overnight, stirring once or twice during that time, or place everything into a plastic storage bag and refrigerate overnight.
Remove the meat from the marinade, reserving any remaining as a baste and skewer four or five pieces through their center. Sprinkle both sides of the lamb cubes with salt and pepper.
Preheat grill to 350 degrees, and place the skewers on the rack. Place the skewers on the hot grill and cook for 10 to 15 minutes, turning 2 or 3 times, until the lamb is medium-rare.
