Ingredients

    1/2 pound lean ground beef
    • 1/2 cup chopped onion
    • 1 can (15 oz.) black beans, drained
    • 1 can (14-1/2 oz.) diced tomatoes
    • 1 cup frozen corn
    • 1/2 cup uncooked rice
    • 1 can tomatoe sauce
    1/2 cup salsa
    • 1 tablespoon chili powder
    • 1/4 tsp. salt
    • 1/4 tsp. dried oregano leaves



Directions

In large nonstick skillet, cook beef and onion until beef is browned; drain fat.

Add beans and remaining ingredients except cheese; mix well.

Simmer, covered, 30 minutes or until rice is cooked.

Remove skillet from heat; sprinkle beef mixture with cheese.

Cover and let stand until cheese is melted. Original recipe called for 1/2 cup shredded cheese. This is optional, and not figured into nutrition values.

Serve with tortilla chips, if desired.
