Introduction

Number of Servings: 8

Ingredients

    1 small can of 100% pumpkin (not pumpkin pie mix)
    2 eggs
    1/2 can evaporated milk
    1 tsp ground cinnamon
    1/2 tsp sea salt
    1/2 tsp ground nutmeg
    1/4 tsp ground ginger
    1/4 tsp ground cloves
    40 drops liquid stevia, plain

Directions

1. preheat oven to 425°
2. combine all ingredients and pour into pie plate/pan that has been sprayed with pam or crisco
3. bake 15 min
4. reduce heat to 350° and bake additional 45 min
5. cool completely before serving, best to chill in the fridge overnight

    Incredible!
    I doubled the recipe. Used fresh ginger (less than ground) and fresh grated nutmeg and fresh ground cinnamon. I tried using phyllo dough for crust, but that failed. I also used about a teaspoon extra cinnamon and added allspice and 1/2 c dark brown sugar and 6 stevia packets. the kids even liked it! - 11/28/10
