Ingredients

2/3 cup sugar
1 tsp cinnamon
1/2 tsp each: nutmeg & ginger
1/4 tsp cloves
3/4 tsp salt
2 cups milk (we use soy milk & nutrition is for soy)
1/4 cup cornstarch
1 cup canned pumpkin (not pumpkin pie filling)
2 egg yolks
10 regular sized marshmallows
1 - 9" baked pie crust
Directions
In a heavy pot, mix sugar, cornstarch, spices together. Add pumpkin and milk. Whisk until there are no lumps. Cook over med-low heat until thickened.
Beat egg yolks. Pour about 1/2 of hot pumpkin mixture gradually into egg yolks, stirring constantly. Return mixture to top of stove & cook another 2 minutes.
Turn off burner. Add marshmallows, stir and remove from heat once they are melted. Cool thoroughly.
Pour into a pie shell and chill well. This is much better when made the night before but good luck having it last that long.
