Introduction

Just spicing up Trader Joe's Harvest Blend Israeli Couscous! Recently updated to be vegetarian! Nutrition facts use water, but you can use vegetable stock instead! Number of Servings: 4

Ingredients

    1 T Olive Oil
    1/4c chopped white onion
    4 whole sun-dried tomatoes, chopped
    2c water (or vegetable stock)
    1 1/2c Trader Joe's Harvest Grains Blend Couscous
    Salt (to taste)
    1/2 tsp ground pepper
    3 tsp ground cumin
    Juice from 1/2 lime
    2 T cilantro, chopped

Directions

Heat olive oil sauce pan. Add onion and tomatoes and cook until onions are translucent. Add chicken broth and bring to a boil. Pour in couscous. Add salt, pepper, cumin, and lime. Simmer covered for 10 minutes. Remove from heat. Mix in chopped cilantro and serve!

    OMG! almost 700 calories? Is that right? - 9/25/10

    Ah! When I entered this, I actually ate it as my whole dinner, so I only put it in as 2 servings... I just changed it to 4 servings. It's still a little high in cals for a side dish, but it's a great treat once in a while!
