Introduction

Number of Servings: 12

Ingredients

    5 Cups zucchini Chunks
    1 1/4 C. Sugar
    2 T. all purpose flour.
    1 1/2 t. cinnamon
    1 1/2 t. cream of tarter
    Dash of salt.
    Dash of nutmeg.
    2 T. lemon juice

Directions

1. Peel and slice large zucchini. (works best in a food processor. Remove the inside of the zucchini with the seeds and process the rest to thin slices, such as you would use for apple pie. A big enough zucchini will make 5-8 pies, you can freeze them in individual 5 cup servings for later.)
2. Steam the zucchini slices until tender and slightly opaque.
3. Drain and cover with cold water. Let stand five minutes.
4. Add the sugar, flour, cinnamon, cream of tarter, salt , nutmeg and lemon juice.
Cover with foil and bake at 400 degrees until the pie is bubbling in the middle, usually 40 mins to an hour. After 40 minutes I usually take the foil off the center and just cover the sides of the pie. Then keep baking until it is bubbly in the center.
Tastes just like apple pie, really good with ice cream!
