Ingredients

    1lb sweet Italian sausage, meat pushed out of casings
    1 TBL olive oil
    8 oz canned mushrooms
    1 medium onion, finely chopped
    1 TBL minced garlic
    1 14.5 oz can cannellini beans, drained
    2 TBL tomato paste
    1 TBL quick-cooking tapioca
    1 14.5 oz can chicken broth
    2 long carrots, scraped and diced
    1/3 cup grated Parmesan cheese

Directions

Makes appx 6 (1 cup) servings.

Warm olive oil in large skillet, add sausage meat, onions and carrots and cook until sausage is browned and onions soft (appx 7 mins). Drain off fat before adding to slow cooker. add all remaining ingredients except the Parmesan. Mix gently until tomato paste dissolves.

Cover and cook on low for 8 hrs. Serve in individual bowls topped with grated Parmesan cheese.
