Ingredients

1 egg
30 raisins
1 teaspoon olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
0.25 cup cheddar low fat cheese
0.5 cup chopped onion
0.25 cup milk, non fat
0.25 cup chopped green bell pepper
0.25 cup chopped red bell pepper
0.25 cup chopped mushroom (pieces or slices)
0.25 cup chopped tomatoes
0.25 cup chopped pineapple
0.25 cup salsa
salt and pepper to taste
Directions
In a bowl, beat the egg, milk, half a teaspoon of pepper, half a teaspoon of garlic powder, salt and salsa together until fluffy
In a non-stick pan, add the olive on a low flame until slightly warm
Add the onions, peppers, mushrooms, pineapple, raisins, tomatoes along with the rest of the garlic powder and some salt and pepper to taste.
On a medium fire just toss around until slightly caramelized, set aside.
Put cooked mixture into the egg and wisk until blended with all flavors.
Return to pan on a low flame and cover for 10 minutes. When the egg starts to look golden and firm from below, turn and add the cheese on top and cover for an extra 5 minutes.
Serve warm or cold with a slice of Whole Grain or Multi Cereal Bread or alone
