Ingredients
-
3/4 cup Basmati rice
1 cup Urad Dhal
1tsp salt
1tsp canola oil
Directions
wash rice, then soak in enough water to cover the rice. Wash dhal, then soak in 3 cups of water. Cover both rice and dhal containers and soak 3 hours - overnight. Next take the soaked dhal and water mixture and grind in mixer or food processor til it is a smooth batter ( some small grit can still remain). Empty mixture into a deep bowl or pot. Now grind the rice and water mixture. It doesn't have to be completely smooth but should be of batter consistency. Now add rice mixture to dhal. Add salt and mix well. Cover and let sit 8 hours -12 hours. Batter will almost double in size so leave room in pot/ bowl for expansion. To cook the Idli, grease idli maker with oil and fill with batter. Put small amount of water in bottom of pot and cover. Put stove on high flame and cook for about 10 minutes. Then switch off gas, remove idlis maker and allow to sit for a minute before removing idlis from the maker. serve hot with sambhar and/or chutney. Makes 10 idlis.
