Ingredients
-
Chicken Breast, no skin, 3 ounces
Braggs Liquid Aminos, 1 tbsp
Pineapple Juice, 1/3 cup
Pineapple, fresh 1/4 cup, diced
Mangos, 1/4 cup, diced
Peppers, sweet, red, raw, sliced, 1/4 cup
Scallions, 1 tbsp., minced
Olive Oil, 1 1tsp
Lemon juice, 1 tbsp Pepper, black, 1/2 tsp.
Splenda, 1 tsp
Directions
In a bowl, place pineapple juice and braggs and blend. Add skinless chicken breast and allow to marinate in the refrigerator for 20-30 minutes. (Over night is even better).
Place diced mango, pineapple, red bell pepper and scallions in a bowl. Add lemon juice, olive oil, and splenda and mix together. (you can marinate over night as well or for just 20-30 minutes in the refrigerator), this helps to meld the flavors together better.
In a nonstick skillet/pan, spray with nonstick spray and place heat on medium high. Once the heat is up, place marinated chicken in the plan, cook 6 minutes on each side or until cooked all the way through.
Slice chicken julienne style, place on plate and spoon mango chutney over chicken.
Tip: For a full meal, add 1/2 cup of rice and a salad.
