Ingredients

    # *Potato, raw, 2 large (3" to 4-1/4" dia.) (remove)
    # Summer squash, 1 medium (remove)
    # Zucchini, baby, 1 medium (remove)
    # *Canola Oil, 2 tbsp (remove
    oregano
    basil

Directions

Mix oil and seasonings to taste. Slice or chop vegetabels and toss in oil. Bake in a large baking pan (Iusea 14x8) sprayed with pam and bake at 350 degrees for about 45 minutes.

Makes about 6 1 cup servings.
