Ingredients

    Sugar .5 cup
    Applesauce 1 cup
    Vegetable or Olive oil .25 cup
    Vanilla Exctract 1 tsp.
    Eggs 2
    Flour 1cup
    Whole Wheat Flour 1cup
    Salt .5 tsp
    Baking Soda 1 tsp
    Cocao Powder .5 cup
    Banana, fresh 1 cup or a little more for moistness if desired (up to 4 bananas)
    Walnuts if you wish .5 cup (not added into my nutritional facts)

Directions

Preheat oven to 350 degrees.
Spray muffin tins with baking spray, like Pam.
Take the Applesauce, sugar, and oil and mix.
Add 2 eggs and Vanilla.
Add white and wheat flours, cocao powder, salt and baking soda and mix till all ingredients are moist.
Mash bananas and blend just until all is mixed well. Don't over mix. Add nuts at the same time as bananas if desired.
Put mix into muffin pan and bake at 350, for about 20 minutes.
