Introduction

This is an unconventional dessert given me by my weight watchers leader. It has no flour, using chickpeas to bind instead. Importantly, after cooking, this must be frozen solid, then thawed for 10 minutes before serving. I love it, and my kids have given it the stamp of approval :o) This is an unconventional dessert given me by my weight watchers leader. It has no flour, using chickpeas to bind instead. Ingredients

    8 oz dark chocolate, melted
    3 tbsp cocoa powder
1 1/3 cups of chickpeas, drained, and rinsed
    1 cup applesauce, unsweetened
    1/2 c maple syrup
    1/2 tsp baking powder
    1 large fresh pitted date
    1 tsp Grand Marnier(optional)
    1/4 c hot water

Directions

Put all ingredients into a food processor and blend until completely smooth. Please do not take too long with this as the chocolate can harden and make blending difficult. After you have blended pour into a pie plate and cook at 350F for 50-60 minutes. This recipe doesn't rise considerably so 60 minutes should be plenty. Cool completely and then freeze. Please allow 10 minutes for dessert to thaw on counter before serving.

Serve with light whip of your choice or even a reduction of berries fresh fruit.(raspberries being my favorite). Enjoy!
