an edited version - less oil, less fat. I switched white flour to half white / half wheat. baked it in a loaf pan with baking paper. and it's a hit!

Ingredients

    2 eggs
    1/4 cup vegetable oil
    1/2 applesauce
    2 cups sugar
    1 teaspoon vanilla
    1 cup white flour
    1 cup whole wheat flour
    2 teaspoons cinnamon
    1 teaspoon baking soda
    1/2 teaspoon salt
    4 cups chopped apples

Directions

pre-heat oven to 350. line silicone pan with baking paper (to avoid greasing). chop the apples. mix the eggs and sugar together, then add the rest of the ingredients (except the apples). after mixed, add the apples (should be about 4 cups of apples). bake for about 50-55 minutes. (may be less).
