Introduction

This is an old Fall favorite re-vamped to eliminate the dairy and corn. This is an old Fall favorite re-vamped to eliminate the dairy and corn.
Number of Servings: 12

Ingredients

    10-12 small - medium potatoes
    4 Large Carrots
    1 lb. Lean Ground Beef
    1 Cup Vegetable Broth
    4 Tbsp Earth Balance
    Salt, to taste
    Pepper to tast
    1.5 tsp Paprika

Directions

Peel cut and boil potatoes. Peel cut (on diagonal and steam carrots. Mash potatoes with Broth and Earth Balance, salt and pepper to tast. Brown ground beef with salt and pepper to taste. Drain Excess fat. In a 9 x 13 casserole Layer ground beef, then carrots then top with potatoes. Sprinkle with Paprika and bake at 350 for 30 minutes. Cut into 3 x 4 servings.
