Introduction

Number of Servings: 10

Ingredients

    6 cups (one 48 oz. jar) Randall's Deluxe Mixed Beans
    1/2 package Eckrich SkinlessTurkey Smoked Sausage
    2 cups canned no salt tomatoes (I used my home frozen)
    1/2 cup grated carrots
    1/ c. chopped onon
    1/2 cup diced celery
    1/4 tsp. garlic powder (not salt)
    1/4 tdp ground thyme
    1 Tbsp extra light olive oil
    2 cups Swanson Lower Sodium Fat Free Beef Broth

Directions

Saute the onion and celery in the olive oil in soup pot until tender. Cut meat into bite-size pieces and add. Add all the other ingredients with the exception of half the beans. Bring to nearly a boil, cover, reduce heat and simmer about 20 minutes. Add the rest of the beans and simmer another 20 minutes until all is hot and thickened. (I cooked the beans half at a time to keep the thick soup from sticking, but if you put it all in a crockpot, you could put them all in at once.)

Makes 10 1-cup servings.
