Introduction
This soup is super yum and the cheese adds a bit of richless. The calories calculator should be accurate but I've had to estimate the brocolini and vegetable stock as I couldn't write bunch or litres, but it's very healthy. Ingredients

2 tablespoons olive oil
1 Leek, washed and sliced
2 cloves garlic, finely chopped or crushed
2 L vegetable stock
2 bunches Brocolini or Brocoli, chopped roughly
100 grams blue cheese
thyme for garnish
Directions
Heat olive oil in a deep saucepan to a medium heat, saute leek and garlic until tender (approx 10 minutes).
Add brocolini and vegetable stock and simmer for about 15 minutes, or until tender.
Blend mixture in a food processor or blender until smooth, adding small amounts of the cheese to ensure it melts smoothly and is consistent through the soup. Wash original saucepan out and return to stovetop. Return blended soup to the saucepan to warm.
Add thyme before serving.
