Ingredients

    6 ripe bananas
    2 eggs
    3 egg whites
    1/2 cup brown sugar
    1/4 cup splenda granules
    1 Tbs vanilla extract
    1/4 cup low fat buttermilk
    1 1/2 cup rye flour (buckwheat flour would also be good)
    1/2 cup corn meal
    1 cup unbleached flour (whole wheat would also be good)
    1/2 cup flax meal (ground flax seed)
    1 1/2 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    1 1/2 cups chopped walnuts


Directions

Makes 18 muffins

Preheat oven to 350 and spary muffin pans with pam.

In mixer mash 6 very ripe bananas, then add eggs and egg whites, lowfat buttermilk, brown sugar, splenda granules and vanilla extract. Mix well. Then combine dry ingredients - rye four, corn meal, unbleached flour, flax meal, baking soda, salt, ground cinnamon and add to the wet ingredients. Mix just until ingredients are lightly blended. Mix in chopped walnuts.

Divide batter to fill 18 muffin cups and bake at 350 for 20-25 minutes.
