Ingredients
-
1 tsp Garlic powder
1 tsp Onion powder
0.50 tsp Pepper, red or cayenne
1 tbsp Basil
16 ounces Chicken Breast (cooked), no skin, roasted
1.50 cup, chopped Carrots, raw
3 stalk, large (11"-12" long) Celery, raw
4 cup (8 fl oz) Water, tap
1 tsp Cumin (ground)
56 oz Clear chicken Broth fat free/low sodium - Kroger
32 oz Reames egg noodles 16 oz frozen bag
Directions
In large pot combine chicken broth and water, add chopped onion, celery and carrots. Bring to a boil then turn down to a simmer. While this is heating up move on to the next 2 steps.
Combine all spices - onion powder, basil, garlic powder, red pepper & ground cumin in a small dish and set aside.
In another pan combine chicken with the spice mixture and cook till chicken is no longer pink inside.
When chicken is done, pour it into the broth mixture and continue to simmer for 15 minutes.
Add noodles to pan and continue to simmer for about 1 hour (soup can be eaten as soon as it is warm, but tastes better the longer it simmers).
It is a lot thicker if it is refridgerated over night so when reheating add an additional can of broth.
Makes approx. 10 - 1 1/2 cup servings
If you can only find the noodles in 24oz package just reduce the water by a cup, but this will change the number of servings.
