Introduction

My husband put this together so my calculations are as accurate as I can get them. The soup is 1 can, the rice was one boil in bag unit (I could not remember the exact amount of cooked rice this makes). The chicken is one 1lb boneless skinless breast. Number of Servings: 6

Ingredients

    1 lb boneless skinless chicken breast
    1 large fresh broccoli stalk (or frozen is good, too)
    0.5 cup plain bread crumbs
    0.5 cup kraft free shredded cheddar cheese (or preferance)1 can cream of chicken soup, 98% fat free
    1 boil in bag Uncle Ben's whole grain rice

Directions

Bake chicken breast in oven for 30 minutes or till done at 350 F (or prepare in AM or night before)
chop broccoli
in seperate pan boil rice per box directions
in seperate pan boil broccoli till tender
When chicken is done cut to bite size pieces and place in 9x9 casserole dish with broccoli on bottom
spread soup over chicken and broccoli
Spread breadcrumbs over soup then top with cheese
Bake at 350 for about 30 minutes to set and till cheese is melted and golden brown.
This came out to around 6-8 one cup servings

    Quite good but next time I will mix the chicken, broccoli, rice and chicken soup together with some extra water until it's wetter. Also I sauteed the chicken to sped up the cooking time. Otherwise it's a lovely flavour and very easy. I cooked up the ingredients. BF put together and cooked later. - 6/27/11
