Ingredients



    * Ham, extra lean, (5% fat), 2 slice (6-1/4" x 4" x 1/16") (remove)
    * Carrots, raw, 4 medium (remove)
    * Celery, raw, 4 stalk, medium (7-1/2" - 8" long) (remove)
    * Onions, raw, 2 medium (2-1/2" dia) (remove)
    * Zucchini, 2 cup, sliced (remove)
    * Olive Oil, 2 tbsp (remove)
    * Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt, 6 Cup (remove)
    * Stewed Tomatoes, 4 cup (remove)
    * Chicken Broth, 30 fl oz (remove)

Directions

In large dutch oven or stock pot, over medium high heat, add olive oil. Cook onions, celery and carrots until onions are softened. Add diced ham, beans, tomatoes and broth. Add zucchini. Heat to boiling and lower temp to simmer. Great meal to put in the crock pot all day.

    Incredible!
    We decided to for go another heavy holiday meal, so I made this today for our New Year!! I did not have the zucchini and used rotel instead of stewed tomatoes. I also used some vegetable broth along with chicken broth, It was amazingly good! - 1/1/12
