Introduction

The best, as far as I'm concerned (but I guess I'm a little prejudiced...) The best, as far as I'm concerned (but I guess I'm a little prejudiced...)
Number of Servings: 8

Ingredients

1 15 oz. can pumpkin (NOT pumpkin pie mix)
    1 c. fat free half & half
1 c. splenda brown sugar blend
    2-3 tsp. pumpkin pie spice
    1 tbsp. cornstarch
    .5 tsp salt
    1.5 tsp a/p flour
    1 tbsp unsalted butter, melted
1 9" ready made frozen pie crust

Directions

Preheat oven to 450 deg. Thoroughly mix all ingredients (aside from pie shell). Pour into pie shell and smooth top. Bake @ 450 for 20 minutes. Reduce heat to 375 deg. and bake for additional 20 minutes. Allow to cool before cutting.

NOTE: Recipe can easily be doubled. Also can be prepared up to the point of baking, then frozen. Cover top with plastic wrap, then place in gallon size zipper bag. When baking frozen, add about 10 minutes to each baking time.

Hope you enjoy it as much as I do.
