Introduction

My new favorite lunch! My new favorite lunch!
Number of Servings: 4

Ingredients

    3/4 cup barley, cooked according to package directions (you can use any grain here – Brown rice, quinoa), cooled
    ½ lb shrimp – peeled, deveined, cooked, chopped
    2 large cucumbers, peeled, seeds scooped out and diced
    1 small red onion
    1 c. chopped sun-dried tomatoes
    ½ cup crumbled feta
    1/3 cup packed parsley leaves, chopped
    2 T fresh dill, chopped
    ¼ cup Lemon Juice
    2T olive oil
    Salt and pepper



Directions

Mix and eat.

I calculated using 4 servings when I eat this as a main dish salad (I just split the salad into 4 containers).
