Ingredients

    1 cup dried black beans
    1 can beans in tom sauce 398ml
    1 can plum tomatoes or crushed tomatoes 375 ml
    1 tbsp cilantro
    2 cloves garlic
    1 bay leaf
    1 med onion, chopped
    1/2 Jalapeno pepper/ or chili spice to taste

Directions

soak 1 cup dried black beans 2-3hrs in 3 cups cold water

Drain and cook in 2 cups fresh water x 15 min.
Add canned tomatoes and spices
Simmer for 60 min ensuring beans remain covered with liquid

Add canned beans to decrease spiceness/heat and add sweetness

Boil mixture up once while stirring, smashing down any tomatoe pieces that remain large with potatoe masher. (some of the beans will be mashed as well but this thickens the liquid slightly and gives the dish its consistency.
