Introduction
I jokingly call this my "quoffle". It is so light and fluffy it is kind of a mix between a quiche and souffle!Over the years, I've searched for a quiche recipe that I really like and feel like I can eat. I've come across a number of recipes that just weren't quite right. This takes the best parts of all of them to make a healthy, light and tasty meal! I jokingly call this my "quoffle". Number of Servings: 4
Ingredients

4 whole eggs
(or 3 whole eggs and 2 egg whites)
1/2 cup non fat milk
1/3 cup shredded low fat cheese of your choice (I like cheddar)
1/2 cup whole wheat flour
1/2 tsp baking powder
1 medium zucchini sliced
Garlic salt and pepper to taste
Directions
Saute zucchini until just starting to soften.
Place in the bottom of a lightly greased pie plate or quiche dish
Add the rest of the ingredients in a blender and blend for several seconds until flour is fully incorporated and mixture is light and airy.
Pour over zucchini and bake at 375 for 30-40 minutes. Quiche is done when it is golden brown on top.
Feel free to omit the cheese. I add a small amount because it makes me feel indulgent, but it really isn't missing anything if you leave it out!
Makes 4 main dish size servings.
