I wanted a creamy asparagus soup without the cream, and I remembered once making a recipe that used potato to make it creamy, so I tried that and the result was delicious! Ingredients

    2 boxes of low-sodium chicken broth
    1 lg potato, sliced into chunks
    1 med onion, chopped
    1.5 lbs asparagus, tough ends removed, cut into 1/2" pieces
    1 C broccoli florets
    3/4 C chicken breast, cut into chunks
    2 cloves garlic, sliced

Directions

Bring to a boil and simmer until everything is soft, about 15-20 min. Run everything through the blender in batches until smooth.
