Ingredients

2 10 oz. packages of frozen chopped broccoli florets
2 cans chicken (I used Tyson lowfat)
1 (10.75 oz) can 98% Fat Free Cream of Mushroom Condensed Soup
1 4 oz. can mushroom pieces
1 cup Colby and Monterey Jack shredded cheese (I used Kraft brand)
1 cup lite mayonnaise
2 medium eggs, beaten
garlic salt
pepper
lemon juice
12 buttery round crackers (I used Ritz), crushed
3 tbsp. butter
Olive oil or Pam spray
Directions
Pour frozen broccoli into the bottom of a greased pan (that's what the Pam is for).
In a bowl, combine the soup, mayo, mushrooms, eggs, cheese, and seasonings thoroughly, then mix in chicken.
Pour evenly over the broccoli.
Sprinkle crackers evenly over the top.
Lay butter, in pieces, on top of the crackers
Bake at 350 degrees for 45 minutes or until heated through and browned on top. Remember, if you make this ahead of time, the broccoli will thaw and require less cooking time, say, 30 minutes.
