Ingredients

3 cups broccoli florets, cut to bite-size
    12 eggs
    1/4 cup milk, 1%
1 cup shredded cheese, 2% milk
    1/3 cup finely diced bacon
2 tsp Mrs. Dash, Original Blend
    1-2 tsp black pepper
3/4 cup sour cream, reduced fat

Directions

Preheat oven to 375 and lightly coat a 9x13" (3 qt) baking dish with nonstick spray.

After washing 2-3 heads of broccoli, cut off florets and separate into 1-inch pieces. Place broccoli florets in a 6-qt pot and cover with water, then bring the pot to boiling, just until the broccoli is bright green. While the broccoli drains and cool in a colander, whisk 12 whole eggs in a large bowl with milk, Mrs. Dash and black pepper.

Place the drained broccoli in the baking dish in a single layer and sprinkle evenly with a cup of reduced fat shredded cheese, then pour the egg blend over it . Top off with 1/3 cup diced bacon pieces, then bake for 25-30 minutes.

Cut into 12 servings, and serve as is or with a dollop of reduced fat sour cream on top.
