Introduction

I took a regular pumpkin muffin recipe and adapted it to make it healthier but still taste good. You can also make 36 muffins and substitute raisins and/or nuts for the chocolate chips. Ingredients

    2 cups wheat flour
    2 3/4 cups white flour
    1 cup white sugar
    1 cup brown sugar
    1 cup splenda
    1 1/2 t. baking soda
    1 1/2 t. baking powder
    1 1/2 t. nutmeg
    1 1/2 t. cinnamon
    1/2 t. cloves
    1 cup egg whites (or 12 egg whites)
    1 (29 ounce) can pumpkin
    1 cup unsweetened applesauce
    1 cup chocolate chips (or raisins or nuts)

Directions

1. Preheat oven to 350 degrees and line or grease 30-36 cups in muffin pans.

2. In very large bowl, mix all dry ingredients. In separate bowl, mix wet ingredients. Then, mix all together until smooth. Mix in chocolate chips.

3. Spoon into muffin cups and bake for 30-35 min or until toothpick comes out clean.
