Introduction
I made this up after getting frustrated with the calories involved in the usual chicken salad. I wanted something that tasted great, but was low cal and low fat. It is very yummy. Hope you like it. Ingredients

2 (12.5oz) Cans Chunk Chicken Breast in Water
1/2 cup of LIGHT mayo (8 tablespoons)
6 Green Onions (Or a small Bunch)
3 stalks of Celery
2/3 Cups Dried Cranberries
Salt & Freshly Cracked Pepper to taste
---Makes 8 servings---
Directions
In a large bowl:
1. Chop Green Onions & Celery to desired size, and add to bowl.
2. Drain chicken and add to bowl
3. Measure out dried cranberries and add to bowl.
4. Measure out mayo and add to bowl.
5. Add (kosher) salt and freshly cracked Pepper to taste
6. Mix thoroughly while "un-chunking" the chicken in the process.
This Divides into 8 Servings (Approx 1/2 Cup each). Serve on wheat bread, or eat in lettuce leaves..... etc.
Best when made the day before so the flavors mix and the cranberry infuses the mixture.
Enjoy!
