Introduction

Ingredients

    1 tbsp olive oil
    1/2 large onion, chopped (1 cup)
    1 bell pepper, s hopped (1 cup)
    1 large zucchini, diced (2.75 cup)
    1 medium yellow squash, diced (1.5 cups)
    2 cups diced mushrooms (stems removed)
    2 tsp minced garlic
    2 tsp dried leaf oregano
    1 tbsp italian seasoning
    2 tsp worcestershire sauce
    1 lb lean ground turkey
    1 can tomato soup (progresso creamy tomato basil)
    1 can tomato sauce (kroger brand)

Directions

Heat oil over medium heat in large skillet. Add onion, pepper, and garlic. Saute until softening, about 3-5 minutes. Add mushrooms and cook 3 minutes. Add zucchini, squash, and spices and cook 3-5 minutes. Pour all into large pot and add worcestershire, tomato sauce, and soup. Set over medium heat. In the same large skillet, brown the ground turkey, adding salt, if desired. When browned, add turkey to pot. Bring sauce to a simmer and cook, stirring occasionally, 20 minutes. Makes about 16 servings, 1/2 cup each. Serve over pasta or rice, or even enjoy as a hearty soup.
