Ingredients



    * *Fish Market Mahi-Mahi, 16 oz (remove)
    * Onions, raw, .5 large (remove)
    * *Peaches, fresh, 1 medium (2-1/2" dia) (approx 4 per l (remove)
    * Olive Oil, 6 tbsp (remove)
    * Morton Light Salt, 1.5 tsp (remove)
    * Cinnamon, ground, .5 tbsp (remove)
    * Nutmeg, ground, .5 tbsp (remove)
    * Pepper, black, .5 tbsp (remove)
    * *Italian Seasoning, 0.5 tsp (remove)
    * Garlic powder, 1 tbsp (remove)
    * *Onion powder, 1 tbsp (remove)
    * *Ground Mustard, .10 tsp (remove)
    * Paprika, .10 tsp (remove)
    * Parsley, dried, .10 tsp (remove)
    * Lemon juice, 3 tbsp (remove)

Directions

Preheat oven to 450.
Lightly oil a glass dish for baking (use only 1 tbsp of the oil and reserve the rest).
Rinse fillets and pat dry.
Place fillets skin side down in glass baking dish.
Mix all seasonings together and pat onto fish (you will have some leftover, just place it in an airtight bag or container and save it for next time).
Chop and dice peaches and onions and cover fish with them.
Then, pour remaining oil on fish and finally, the lemon juice on the fish.
Heat in oven for approximately 10 minutes per inch of thickness.
...and viola! Serve on its own or with rice. Should be enough to feed four (unless you have growing boys... they may require more than four oz servings).

    Very Good
    I did not use the onions or ground mustard. Being that my boyfriend does not like fish, after cooking it, I measured out the portions, for lunch for me this week! Very yummy, the peaches made a nice sweet touch. - 2/1/11
