Introduction
Just like stuffed green peppers only in a soup. You can make this low-fat by using ground turkey instead of the ground hamburger. I used lean ground hamburger and drained as much fat off as possible. Ingredients

1 lb Hamburger
1 med Onion
3 Green Peppers
3 Cloves of Garlic
2 cans diced tomatoes no salt added
4 cups 99% fat free chicken broth
1 6 oz can of tomato paste
1 cup pearl barley, cooked per package directions
1 tsp onion powder
1 tsp garlic powder
2 dashes of kosher salt
1 tsp black pepper
1 tsp celery salt
1 tbls Italian seasoning
Directions
Ground hamburg with chopped onion and green pepper until hamburger is no longer pink and onions and green peppers are somewhat soft. Add chopped garlic for a couple minutes then drain fat. Put hamburger mixture in soup pan, add tomatoes and juice, broth, tomato paste, onion powder, garlic powder, celery salt, salt, pepper, italian seasoning and barley. Let simmer for about 15-20 minutes and serve. I like a little reduced fat cheddar cheese melted on top. Delicious and filling. Tastes better the longer the flavors have a chance to mesh. Makes 8 1-cup servings.
