I have had many a tuna patty growing up, and this is by far the best I have ever tasted. Your kids will love this, and you'll love that they're eating hidden veggies! Ingredients

    Italian bread crumbs, 1/4 cup
    Onion, chopped fine, 1/8 cup (or 1 green onion)
    Carrot, shredded, 1 medium
    Cayenne Pepper, 1 pinch
    Eggs, 2 large
    Parsley, dried, 2 teaspoons (or 2 tbsp of flat leaf parsley)
    Tuna, canned in water, 2 6.5oz cans
    Extra Virgin Olive Oil, 4 teaspoons

Directions

Mix all ingredients except the oil. Form mixture into 4 patties. Heat oil over medium heat. Sauté patties 4-5 minutes each side, turning carefully (they fall apart easily). Serve on whole wheeat buns or over toasted whole wheat bread.
