Number of Servings: 6

Ingredients

    3 bunches of broccoli (approx. 1.5 lbs), coarsely chopped
    2 - 13 oz. cans of chicken broth
    1 medium onion, coarsely chopped
    1/2 t. curry powder
    1/4 t. black pepper
    1 T. lemon juice

Directions

Combine all ingredients except lemon juice in a large pot. Simmer for about 35 - 45 minutes or until the broccoli is very tender. Use an immersion blender or regular blender to blend the soup until creamy and smooth. Stir in the lemon juice and serve. Makes 6 (approximately 1.5 cup) servings.
