Introduction

Ingredients

1 fresh egg
1 tsp water
1 slice of REAL american cheese (not cheese product), torn into strips
2 TBS your favorite salsa
1 slice crispy bacon (optional), broken into small chunks
1 spray PAM canola oil
Directions
This is a serving for one.
Scramble egg in a cup with 1 tsp water. This helps blend the yolk and white together and makes for a fluffier omelet.
Heat up small 6" non stick fry pan over med heat,pull pan off stove and spray once with PAM.Return pan to heat. Pour egg in and 'roll the egg around' in the pan until it covers the bottom. Let it cook for about 30 seconds, then add the cheese, salsa and bacon. Remove from heat. By now, the egg should be fully cooked. You can let it stand in the pan for a few more seconds to finish cooking to your doneness preference.
Serve with some orange slices/wedges and wheat toast or bran muffin or what ever you fancy!! Or put inside awarmed wheat wrap for a 'to go' breakfast.
With a heat proof rubber spatula or carefully with a small regular spatula, go around the edge of the pan/egg to loosen. From here, 3 options. 1, serve open, 2, fold in half or 3, fold in thirds (easy and makes a nice presentation for those who are not 'omelet adept :-))
