Ingredients

    2 tbsp chia seeds
    1/2 cup cold water
    1/4 cup + 1 tsp stevia
    1 tsp vanilla extract
    1.5 cups whole wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    1/2 tsp pumpkin pie spice
    15 grams Ghirardelli Semi-Sweet Chocolate Chips (these are the only vegan chocolate chips I could find)

Directions

Preheat oven to 400 degrees F and lightly grease 12 muffin wells with non-stick vegetable-based spray.

Combine chia seeds and cold water in a large bowl and stir. Let it sit for a minute or so until a gel begins to form. Mix in vanilla, pumpkin, and stevia.

Add all remaining ingredients *except* chocolate chips. Distribute batter into all 12 muffin wells. Top with chocolate chips and bake at 400 degrees for 20 minutes. Cover with foil, lower temperature to 375, and bake for another 10 minutes or until toothpick inserted in center comes out clean.

Makes 12 muffins, one muffin per serving.
