Ingredients
-
1 Box of Pillsbury Reduced Sugar Devils Food Cake
3 Egg Whites
1/2 Cup of unsweetened Applesauce
1 1/4 cup of water
Frozen berries
Directions
Preheat oven to 350 degrees, Prepare Muffin pans (you'll need 2) and either spray muffin tins with cooking spray or use paper baking cups.
Mix all the ingredients together except for the frozen berries. Beat with mixer for 2 minutes until batter is smooth. I took a 1/4 cup scoop to scoop out the batter into the prepared muffin tins. Put a few of the frozen berries into each cupcake. I use a chopstick to push the berries down and smooth out the top.
Bake for 18-22 minutes. Check by inserting a toothpick into the cupcake and make sure it comes out clean.
To keep calories low, I use Cool Whip to top the cupcakes! Enjoy!
