Introduction
These easy fish cakes use canned tuna as a main ingredient. I have omitted the bread crumbs and use eggs as a binding agent.The spices are just a suggestion, put whateve spices you like in to suit your taste.

Ingredients

6oz Chunk Light Tuna in Water (low sodium variety as diet dictates), drained well
1/4 cup finely chopped white onion
1/3 cup carrots, finely chopped
1/2 tbsp garlic, chopped or crushed
1tsp chili powder (optional)
1/5 tsp Italian Seasoning
salt/pepper to taste (remember tuna can be salty)
1/3 cup shredded cheese, reduced fat
1/4 cup egg white
Directions
Sautee the onions until they are mostly clear, but not quite carmelized.
Mix Tuna, onions, carrots, garlic, cheese, spices, salt and pepper together.
Taste as adjust spiced as necessary.
Add Egg Whites and mix well.
Divide mixture into 8 equal portions. Flatten into cakes, approximately 2.5 inches across.
Heat olive oil in a skillet on medium heat. Less may be needed if you are using a non-stick skillet.
Once oil is well heated, place patties in skillet on low to medium heat.
Cook for approximately 3-5 minutes aside, turning once. Be wary of the first turn as the eggs will not be completely cooked, so they won't bind the patties together.
When finished, patties should be cooked through (for the egg) and fairly firm.
Serving size: two patties

Suggestion: Serve over a mixed greens salad with vineagrette dressing, or on low calorie, whole grain bread with reduced fat mayonaisse, relish, lettuce & tomato.
