Ingredients

2 boneless skinless chicken breasts, cubed
1/2 cup of yellow curry sauce
1/4 cup water
pineapple chunks, drained from can, 1 cup
1/ cup raisins
1/4 cup or less of slivered almonds
1 cup uncooked rice (basmati, jasmine, etc..)
Directions
this delicious dish serves 4....
in a skillet or pan cook your cubed chicken in 1 tbsp olive oil, you may choose to add a pinch of kosher salt to enhance flavor. while cooking chicken, prepare your 1 cup of dry rice in either a rice cooker or stove top.
once the cubed pieces of chicken are browned on all sides, add taragon, rosemary, pineapple, raisins and sliced almonds. sautee them for about 5 minutes and then add curry sauce and water. turn the heat to medium, stirring occasionally until the water cooks off. by the time your rice is done, so is the chicken curry! serve over 1/2 cup of cooked rice and enjoy!
