Ingredients

1 can (16 oz) whole peeled tomatoes with juice
1 onion
1 or more cloves garlic
1 tbsp or more chipotle in adobo sauce
1/4 cup fresh cilantro chopped
juice of one lime
1 16 oz can black beans rinsed
pinch or more of cumin
8 eggs
8 small corn tortillas
Directions
This recipe makes 4 servings with two eggs each per tortilla. You can make the salsa ahead of time (even day before) and refrigerate.
Combine first 5 ingredients and the juice of half the lime. Add salt and pepper as desired. Blend until coursely chopped. Put aside.
With the back of a fork, masher or with stick blender lightly mash the black beans adding in the additional lime juice and cumin.
Coat a non stick pan with spray and lightly toast the corn tortillas.
Poach the eggs in a poacher or water, your preference, or even lightly fry them non stick still yolks are still a bit runny but whites are set..
To assemble, layer one tortilla, spread with 1/8th bean mix, top with an egg and 1/8th of the home made salsa.
Very filling, I've made this several times now and the egg takes the place of using cheese, you won't even miss it.
