Number of Servings: 12


    4 whole eggs
    6 egg whites
    1 cup turkey sausage crumbles
    1/4 cup chopped green onion
    1 lb baby spinach cooked, chopped and dried


Whisk the eggs thoroughly and add all the rest of the cooled ingredients.

Spray a muffin tin liberally with Pam and fill 3/4 of the way

Bake at 350 for 30 minutes or whenever the eggs are firm.

Make sure you take them out of the muffin pan to cool or else they will stick to the sides of the pan.

Makes 12 servings.
