Ingredients

    Pork Tenderloin, 22 oz (remove)
    Olive Oil, 2 tbsp (remove)

Directions

Makes 10 2 oz servings
Season Tenderloin on all sides with season salt and greek seasoning.

In an oven proof saute pan, brown tenderloin on all sides in 1 tbsp of olive oil. Remove and set aside.

Add 2nd tablespoon of olive oil to pan and saute onions and mushrooms. Add white wine to deglaze pan. add balsamic and berry jam and combine til a sauce is formed. Return tenderloin back into saute pan

cover and place pan in 375 over for 35 -40 min
